The Dead Rabbit Irish Whiskey is a unique blend of Irish single malt and grain whiskeys, finished in half-size new American oak casks. This whiskey is the brainchild of Belfast natives and seasoned industry veterans Sean Muldoon and Jack McGarry, the guys behind the Dead Rabbit Grocery & Grog, a bar in NYC renowned for its extensive selection of Irish whiskey. They collaborated with Darryl McNally, the master distiller at the Dublin Liberties Distillery, to create this whiskey.

This whiskey offers a stereotypically light and crisp profile, which can be considered a greatest hits of the Emerald Isle. It’s a mix of malt and grain in the ratio of 30% malt and 70% grain. The malt component is 100% malted barley put through pot stills, while the grain component is a mix of barley and maize (corn) through continuous distillation column stills. The whiskey is matured for 5 years in ex-bourbon casks and then finished in half-size virgin American oak.

It has a gentle arrival on the palate, then gets very bourbon-esque and a bit punchy, with loads of toasted oak, cinnamon, and vanilla. The finish is medium length, with honey, oak, vanilla, and a bit of buttery croissant flavor near the end, which is pleasantly drying.

This whiskey is unapologetic and oak-forward, and it might polarize whiskey drinkers. However, it’s a really well put together whiskey, full of flavor, layers, and texture. It’s very sweet, but not cloying, with strong vanilla on the first taste, but more complex and oaky after.
