Hillrock Solera Aged Bourbon Whiskey is a unique “field-to-glass” whiskey, controlling every aspect from growing their own organic grains to floor malting and smoking it, distilling in copper pot stills, aging, and then bottling on site. This oloroso sherry cask-finished bourbon was one of the first of its kind. Hillrock was also the first American whiskey maker to use a solera aging process. This is a pyramid system in which the stock is never depleted, regularly adding younger whiskey to an older product to maintain consistency and depth.

The solera aging process is a centuries-old method of blending sherry. Hillrock, under the direction of the late Dave Pickerell, the famed whiskey consultant, is the first distiller to apply the method to whiskey. The mash bill of the Hillrock Solera is 63% corn and 37% rye. The distillery estimates the average age of the bourbon that comes out of its Solera system is six years.

The results of this meticulous process are rich, intricate, almost impossibly smooth flavors. The influence of the Oloroso Sherry casks is quite evident, with notes of sweet dark fruits taking the forefront. Most prominent are cherries, candied raisins, and a bit of something else sweet, dried apricots maybe. Underneath, you’ll notice more typical bourbon flavors - vanilla, caramel, rye spice, burnt brown sugar, and just a tiny bit of seasoned oak. It has a bit of an herbal/floral quality to it as well.

The finish is crisp and clean, with a bit of rye spice popping at the onset. As it fades, the taste of sweet cherries balances nicely with seasoned oak and plums. It’s short to medium length, but what’s present is pleasing.
